Breakfast in our home is a pre-fixed menu. We love our oatmeal. A hot bowl of goodness filled with oats is just perfect to start the day. Add some toasted walnuts, pecans or almonds with some dried, fresh and frozen fruits, yummy! Even the pickiest of eaters will have a hard time saying ‘No’.
Lunch on the other hand, is a constant headache for me. Prisha still naps in the afternoons (although that time is decreasing more and more these days) so I try to get as much done as I can during that time. Cooking dinner is a priority so lunch takes a back step. A few days back Debarshi finally complained, I am bored of eating miso ramen noodles with eggs, chow mein and PB&J sandwiches. Can we have something else?
We went to Costco the other day and while picking up bread, I noticed something. A pack of ready made tortillas. I have always been hesitant about getting those because I just love them so much! I feel that I will be eating them very often so I try very hard not to pick them but then I remembered Debarshi’s voice and I thought, oh why not!
These ready made tortillas are a game changer, don't you think? You can use pretty much whatever leftover meat you have, as a filling. I had some leftover chicken curry which I used to make these tacos. They tasted amazing. The whole process took about 20 minutes (and that includes making a reel for my instagram).
Make sure to use fully cooked (roasted, curried or fried) chicken for this recipe. Shred them (remove any bones or whole spices) and lightly mash the vegetables (if any).
These soft tacos come together within minutes so give them a try and let me know how they turned out!

Ingredients:
- Canola Oil - 1 tablespoon
- Chicken - 2 cups, shredded, bones & whole spices removed
- Soft Tortillas - 4
- Lettuce - 1-2 cups, chopped
- Cheese - 1 cup, shredded
- Tomatoes - ½ cup, chopped
- Onion - ½ cup, chopped
- Hot Sauce - as required
Directions:
- Take a large skillet and heat it over high heat.
- Add Oil, wait for 10 seconds so that it heats up, then add the shredded chicken.
- Fry it up so that the extra moisture evaporates completely and the chicken is thoroughly heated.
- Transfer the Chicken to a bowl, wipe the skillet with a paper towel.
- Now let’s warm the Tortillas, place one tortilla on the skillet.
- Let it cook to your desired doneness, if you want a taco roll, cook both sides for a minute or two. To make a soft taco, cook for another minute or two.
- Transfer to a plate and fold to make a taco shell.
- Fill with Chicken, lettuce, onion and tomatoes. Add a few drops of the hot sauce. Top with the cheese.
- Serve immediately.
