Next time you are going to make scrambled eggs, add a handful of spinach in it. Super delicious!
You know that bag of spinach which you always get thinking that you will eat more greens but never do. Then they go bad and you throw them away thinking that you will eat the next box. Then you go to the grocery store and instead of grabbing spinach you pick chips and dip. Believe me I have done that! But this recipe is super easy and absolutely delicious!
Ingredients:
- Butter - 1-2 tablespoons, sweet cream, unsalted
- Spinach - a handful, washed
- Eggs - 3, whisked
- Black pepper - for seasoning (about ½ teaspoon)
- Salt - to taste (about ½ teaspoon)
- Cheese slices - 2-3, pepperjack or medium cheddar
Directions:
- Start by heating a wide pan over medium heat.
- Melt the Butter.
- As soon as the butter melts, add the spinach.
- When the spinach starts wilting, add the whisked eggs, salt and pepper.
- Let the egg set slightly then add the slices of cheese.
- Cover and cook so that the cheese melts.
- Then break the egg so that it scrambles.
- Serve immediately with toast and fruits.
