Chocolate Whipped Cream Frosting


As I have told you earlier, Indian baked products have a lot of similarity with French desserts. You will be surprised to know that Whipped Cream Frosting is used on many Indian cakes. Of all the flavors, I think chocolate is my favorite and so to decorate the Chocolate Sponge Cake, we decided to prepare some homemade light and fluffy Chocolate Whipped Cream Frosting. I had already prepared whipped cream for my Allahabadi Fruit Cream and so I thought I should give this a try. I prepared the whipped cream and Debarshi piped it on the cake. What do you think?


To prepare the whipped cream, follow my directions given in the article: Allahabadi Fruit Cream and use the below ingredients.

Ingredients:
(Stand Mixer recommended recipe)
  • Heavy Cream - 1 cup
  • Vanilla Extract – ½ teaspoon 
  • Confectioners' Sugar - 1 tablespoon
  • Unsweetened Cocoa Powder - 1 ½ tablespoons


Once it is ready, cover and refrigerate till you are ready to use.

So before we start assembling the Piping Bag, let me tell you what it is. A Piping Bag also known as a Pastry Bag or Decorating Bag is a cone or triangular shaped bag. You can easily find a plastic Piping Bag which you can wash and reuse. You may also choose to use a disposable bag which is good only for a single use. A Piping Bag comes handy when you want to decorate or fill your baked products. It has a wider opening at the end (used to fill the frosting or filling) and a narrow opening at the front (through which the piped product comes out). Personally I used to think that using a Piping Bag will be a hassle but actually it isn’t and once you get a hang of it, you will be amazed at its versatility. 

Now buying a Piping Bag is not enough because you also have to buy the Decorating Tips and Couplers. But don’t worry because they mostly come in a set and you can easily find them at Walmart or most grocery stores (Baking aisle). Being a novice myself, I had to go through several articles just to understand how the whole thing works and to make things easier for you I am going to guide you step by step.



Different types of Decorating Tips


A Piping Bag, Tip and two-piece Coupler

A Coupler is a two-part device, the longer part (the Base) goes inside the bag and the shorter part (the Ring) gets attached with the Tip. This helps us to change the Decorating Tips without changing the bag. 

To assemble the Piping Bag:
  • Remove the Ring from the Coupler Base. 
  • Drop the Coupler Base, narrow end first, into the bag and push it down as far as you can.
  • Using a pen, mark a spot on the outside where the Base ends. This will cut any extra plastic and create a better flow for your piping.


  • Remove the Coupler Base and cut the bag at the mark you just made.


See above? The marked area of the bag needs to be cut because it is extra and will obstruct the flow. I do recommend getting a good quality Piping Bag so that you can wash and reuse it. That way you wont have to repeat these steps the next time you are piping.
  • Now push the Coupler Base down the Piping Bag and attach the Ring with the Tip on the front of the bag. Twist to lock the Tip. Your Piping Bag is ready. 




Tips: 
  • I like using a Ring and Base Coupler because it gives me the flexibility to change the Tip whenever I want. I can do some designs with the Plain Tip and then change the Tip to create a different design. All I have to do is unscrew the Ring, change the Tip and lock it back.
  • It is important to choose the right type of Tip because it will help you to pipe easily. I am still a beginner so I just pipe the basic designs. Once you get a little used to, you can pretty much do anything using different Tips. Sky is the limit!


To fill the Piping Bag:
  • Place the Piping Bag in a glass so that the Tip is balanced. 


  • Using a rubber spatula or wide spoon, scoop up your filling and fill it in the bag. Do not overfill. Scrape off any extra filling.


  • Once you have filled the bag, push all the filling carefully towards the Tip of the bag and twist it where the filling starts. This will give a better pressure on the Tip and also keep the top part closed.
  • Before starting on your baked product, try doing a test round in the bowl of the filling. This will push out any unexpected air bubbles and also give you a better idea of the pressure you will be applying to pipe.  
  • Always hold the bag at the place where you twisted. This will help you to push all the filling smoothly towards the Tip while avoiding any spill from the open end. 
  • Don’t be afraid if the piping doesn’t turn out that good. Remember practice makes you perfect. Just keep your hand steady and keep the Piping Tip a bit above the surface you are piping, on a perpendicular angle. That will help it flow easily.
  • Apply pressure steadily and slowly. When you are done piping stop applying pressure and lift the Tip up. 
  • If you need to pause in the middle of piping, place the bag in a tall glass. That way the filling wont spill and it will be easier to pick up the bag again.
  • I have a small Piping Bag because I don’t bake huge cakes normally. You can buy a bigger one although I feel smaller bag is easier to manage at a beginner level.


  • Use a turn table to pipe your cake so that it moves smoothly and does not break your piping. 
  • Once you are all done with your piping, cover your cake with the cake dome and place it inside the fridge.


The cake is now ready to be served!

Shave Chocolate with a Peeler


Everything looks good with a little Chocolate on it. For the Chocolate Sponge Cake with Salted Caramel Buttercream, I decided to decorate it with some shaved Chocolate. My only problem was, I didn’t have a Microplane so I decided to use a peeler. I wasn’t able to create any fine shavings but they looked pretty good on the cake.

Ingredient:
  • A chocolate bar of good quality (I used Ghirardelli)


Directions:
  • To shave the chocolate, simply hold the chocolate firmly in place on a non-slip surface and peel down the edge of the chocolate. The shavings will start to peel off.


Now if you have a Microplane at home, try using it. I am sure you will be able to create fine shavings. For those who don’t know, a Microplane is a grater/ zester and can be used not only to grate cheese or zest lemon but also to shave chocolate. 


When I showed the cake to Debarshi he said that it lacked some decoration (after all we eat with our eyes first). So I decided to prepare some Chocolate Whipped Cream Frosting and pipe it on the cake.

Salted Caramel Buttercream


I am in love with my homemade Salted Caramel Buttercream. As soon as I tasted the Caramel sauce, it immediately reminded me all the sweet childhood memories. Caramel sauce tastes exactly like the butterscotch candy! Now imagine it with a lot of whipped butter, absolutely scrumptious! And I love that the salt cuts through the extra sweetness, however if you are not a fan of salted caramel, feel free to skip the salt. Make it the way you like best. 

This yummy sweet and salty buttercream can be paired with almost any cake. I actually applied it like butter on my toast and it tasted heavenly!

Tips:
  • The Caramel sauce will get hard to mix once it cools down completely. You can heat it up just a little bit so that you can easily scrape it off the pan and into the butter but remember, if it is too hot it will start melting the butter and then it wont whip up nicely. 
  • Try to keep the buttercream refrigerated. Before applying it on the cake just keep it outside for an hour or two and it will get soft. 


Ingredients:
(Stand Mixer recommended recipe)
  • Dark Brown Sugar - 1 cup, firmly packed 
  • Heavy Cream - 1/3 cup 
  • Kosher Salt – ½ teaspoon 
  • Butter - 1 cup, unsalted, sweet cream


Directions to make the Caramel Sauce:
  • Heat a pan over medium heat.
  • Heat the Dark Brown Sugar, Heavy Cream and Kosher Salt in it until the sugar has dissolved. 
  • Bubble for a few minutes, then leave to cool completely. 


  • Attach the stand mixer and the beater.
  • Beat the Butter until smooth.
  • Pour in the cooled cream mixture.


  • Continue mixing until softly whipped. 


  • When the texture looks like below, Salted Caramel Buttercream is ready.


  • Use immediately or refrigerate. Bring to room temperature before frosting the cake for easy application.

Now your cake is all baked and trimmed and the buttercream is ready. It’s time to assemble the cake.

Time to assemble the yummy Cake:
  • Refer to my article on Apply the Crumb Coat. Apply the first layer of Salted Caramel Buttercream all over the cake and let it rest so that buttercream seals all the crumbs of the cake.

Allahabadi Fruit Cream



Fruit Cream is one of the gourmet desserts of my hometown – Allahabad. It is prepared by mixing finely chopped colorful fruits and nuts with freshly whipped cream. Growing up I must have had it hundreds of time and needless to say I still love it! When Debarshi suggested to include this in our North Indian themed get together party, my immediate reaction was, “This will be perfect!”. 

I think it is absolutely amazing how food is intertwined to any person’s life. Of course when I was in Allahabad, I could enjoy Fruit Cream whenever I wanted and hence it never occurred to me that I can prepare this at home myself! Let me tell you that in Allahabad, Fruit Cream is served in the traditional way - in a clay cup. This clay cup is handmade on a pottery wheel and is not only environment friendly but also instills an earthy smell in the cream. Furthermore, the fresh fruits and nuts add a mouthwatering flavor in the cream. It is served cold and hence is a summer dessert.

The online recipes suggested to get readymade cream (or cool whip), but we decided to prepare it from scratch and it turned out to be the best decision for this dish. Believe me cool whip can never compare with the homemade thick cream which is pretty easy to prepare if you have a stand mixer or hand mixer at home. Once the cream is ready, mix all your favorite fruits and nuts in it, cover and refrigerate. Before serving to guests, don’t forget to ask them for any dietary restrictions or allergies. Serve the fruit cream cold in beautiful bowls and enjoy!



Ingredients for the Whipped Cream:
(Stand Mixer recommended recipe)
  • Heavy Cream - 2 cups 
  • Vanilla Extract - 1 teaspoon 
  • Confectioners' Sugar - 2 tablespoons

Fruits and Nuts:
  • Grapes - ½ cup
  • Banana - ½
  • Apple - ½
  • Cashews – 1-2 tablespoons
  • Pomegranate seeds - ½ cup 
  • Golden Raisins - ½ cup 

Tips:
  • Make Confectioners' Sugar at home - Pour granulated sugar into a blender or food processor. Blend the sugar until it is a fine, fluffy powdered sugar. The more refined, whiter sugars will make the fluffiest powdered sugars. You can use the powdered sugar immediately or save it for later (If using Nutri bullet, use the milling blade).
  • Do not use the beater and bowl directly after washing as the water may be hot and it will immediately warm up the cream.
  • Keep the cream refrigerated until you're ready to whip it. Keeping everything cold is important.
  • Heavy whipping cream is usually available in the dairy section of any grocery store. Always check the expiration date prior purchasing it. I used the below brand:


Let’s do some preparations:
  • Half an hour prior making the Whipped cream, keep the beater and the bowl in the refrigerator so that they chill.
  • Chop all the fruits and nuts into small pieces.

Directions to prepare the Whipped Cream:
  • Pour the Heavy Cream in the stand mixer’s bowl. 
  • Add the Vanilla Extract.
  • Attach the beater.


  • The frothy and bubbly stage: Let’s start the whipping, start on low speed then after a few seconds increase the mixer speed to medium. For the first several minutes, the cream will be very frothy and bubbly (hence the stage name).


  • The soft plop stage: Continue to whip till you start seeing trails in the cream. Trails will usually appear after 4 to 5 minutes. When you start to see trails in the cream that don't immediately dissolve after the whisk moves, you've reached what's called the "soft plop" stage. If you take your whisk out of the bowl, the whipped cream will barely hold to the whisk. Have patience, you still have to whip for quite sometime. I actually increased the mixer’s speed at this time but let me tell you, by increasing the speed you are decreasing the whipping time so be careful, extra whipping will result in butter.


  • The soft peak stage: Keep a watch for soft peaks which will appear after 6 to 7 minutes. When the trails in the cream become more solid and a dribble of whipped cream stays floating on the surface of the cream, you've reached "soft peak" stage. If you take your whisk out of the bowl, more of the cream will cling to the whisk but any peaks will quickly soften.


  • The soft tip stage: If you notice in the above photo, the consistency of the cream has beginning to change. You will start noticing firm peaks in 7 to 8 minutes. This means that the trails in the cream will become stiffer and stiffer, and the cream will start to take on volume. If you take your whisk out of the cream, the peaks in the whipped cream will hold firmly but have slightly softened tips. This is typically the best stage to stop whipping and serve the cream.


  • Finally Whipped Cream - the stiff cream stage: After the soft tip stage, be very careful not to over whip. You will notice firm peaks in about 8 to 9 minutes. If you continue whipping, the cream will stiffen even more and you might notice it taking on a grainy texture. If you take your whisk out of the cream, the peaks will be completely stiff. If you whip much more beyond this stage, you'll make butter so be careful and keep checking the consistency. I think this is the perfect stage for the Fruit Cream so I continued till this stage.


  • Serve or store: Once you've reached your ideal stage of whipped cream, serve the whipped cream immediately or cover and store it in the refrigerator for a few hours.


Tips:
  • Cream roughly doubles when it is whipped so two cups of cream will make about four cups of whipped cream, which is enough to make Fruit cream for 10-12 people.
  • The times given above are using a stand mixer on medium speed. If you use a higher speed, the time between stages will be shorter. If you are whipping by hand, the times will likely be longer. Do not use a fork to whip the cream, I tried and it took me forever, finally I gave up at the soft plop stage.

Directions to prepare the Fruit Cream:
  • Take a big bowl and transfer all the chopped fruits and nuts in it.


  • Slowly transfer the whipped cream into the bowl.


  • Using a spatula, gently fold all the fruits and nuts into the cream.


  • Cover and refrigerate for at least 30 minutes. 
  • To serve, use beautiful small bowls, dessert cups or shot glasses. Serve cold.

Tips:
  • Make sure not to slice the banana too soon otherwise it will change to a dull brown color.
  • The best part of this dish is, you can add your favorite fruits and nuts in it. You can make it more colorful by adding fruits of different colors like Mango, Kiwi or Peach.  You can also add Pecans, dried Cranberries and Pistachios in it to create a different flavor. However, the fruits and nuts given in the recipe are the actual ingredients used in the Allahabadi Fruit Cream so I would urge you to try it as it is at least the first time so that you know the actual gourmet taste of the dish.
  • If you have some leftover Whipped cream, you can always freeze it. It can be frozen with the nuts in it. Before serving, thaw it by keeping outside for an hour or overnight in the fridge. Add fresh fruits and serve.
  • If you don’t have a stand mixer or hand mixer at home, you can use any ready made store bought whipped cream or cool whip. Adjust the sweetness by adding some Confectioner sugar in it.
