Carrot Puree/ Carrot Avocado Puree


Baby Prisha will soon progress towards finger foods. I still find it unbelievable that this little babe is growing so fast. Right now she is still eating purees but these days I have started making a lot of her foods at home. I just love preparing foods for her. I choose organic ingredients and wash them thoroughly before preparing them. Now if your baby has just started eating solid foods these quantities will be a little extra for them so keep that in mind. 

One thing I have understood after becoming a mom is, if you can find even five minutes to rest or to do something you like then go for it. I use my small two-liter pressure cooker to cook all the baby foods. Why? Because everything gets cooked so fast. Then I cool them down completely and run them in my Nutri Bullet with the extractor blade. And voila! Baby Prisha’s Food is ready!

This carrot puree is so creamy and yummy that I don’t mind eating baby Prisha’s leftovers. Try it! I promise you it will be worth your time and effort.


Ingredients:
  • Baby Carrots – 20, washed thoroughly
  • Water – 1 cup
  • Avocado – 1, ripe (for the Carrot Avocado Puree)

Directions:
  • Add the carrots and water in the cooker and attach the lid (with rubber and whistle). 
  • Heat on medium and let it whistle 4 times.
  • Let the pressure drop completely before opening the lid. Tip: If the lid resists opening that means the pressure hasn’t dropped yet. 
  • Transfer the cooked carrots to the Nutribullet along with ½ cup of water (use the water in which the carrots were cooked). Tip: Let the carrots cool down completely before running them in Nutribullet otherwise the heat will lock the blade and lid. 
  • Carrot Puree is ready! You can keep this in fridge for up-to 2 days. This process is so easy and quick; I prefer making a fresh batch every couple of days.

Note: While I haven’t tried the steam/ boil methods I am sure they will work fine too. So if you don’t have a pressure cooker just use a pot or steamer basket to cook the carrots. Cook them till they are fork tender then make the puree. Blender, Food Processor or Vitamix will work great as well.



Carrot Avocado Puree:
Follow the same method to boil and cool down the carrots. Cut the avocado in half lengthwise around the pit. Using a spoon, scoop half of the avocado out and place into your blender cup. Add the carrots with 2-3 tablespoons of water (use the water in which the carrots were cooked) and pulse until smooth. Avocado tends to thicken the puree so keep adding water, a tablespoon at a time, till it is smooth and thin enough for your baby.
