Chicken Broccoli Fried Rice/ Casserole


Make a fried rice for you and your baby. I prefer not serving Prisha the casserole because it has mayo and sour cream. However, it is a delicious quick dinner for us and hence I am giving the recipe, try it.

To make the casserole, use cooked rice, boiled broccoli florets, cooked and shredded boneless, skinless chicken breasts. Layer them up in the baking dish and pour over a mixture of chicken soup, sour cream, mayonnaise, lemon juice, shredded Cheddar and some salt and pepper. Top with some more cheddar and bake for 40 minutes at 350 F.

I like making the fried rice with a little bit of Ghee. I fry the rice and chicken with the whole spices then add the vegetables and the spices and boil till everything cooks. Quick delicious fried rice in 20-30 minutes. Before serving to your baby, make sure to remove any whole spices from it. Mash the vegetables a bit so that they don’t just eat the rice (and throw away the vegetables).

Ingredients:
  • Rice – 2 tablespoons, washed
  • Salt – a pinch
  • Turmeric – a pinch
  • Bay Leaf – 1, small
  • Garam Masala – 1-2 pinches
  • Chicken – 1/3 cup, washed and cut in bite size cubes
  • Ghee – ¼ teaspoon
  • Broccoli – 1 cup, cut into big pieces and washed
  • Yellow Squash – 1 cup, cut into medium cubes and washed

Directions:
  • Heat a skillet/ pan over medium high heat.
  • Add the Ghee and Bay Leaf in it. 
  • After about 30 seconds, add the Rice and Chicken, fry till the chicken turns golden in color.
  • Add the Broccoli and Yellow Squash, fry for 2 minutes.
  • Add the Salt, Turmeric and Garam Masala. Stir to mix.
  • Add about ½ cup of lukewarm water, mix and cover with the lid.
  • Let it cook for 10 minutes on low heat.
  • Stir then cover and cook for another 10 minutes. 
  • Once the Rice and Chicken completely cooks, remove the bay leaf. 
  • Serve to your baby at room temperature or slightly warm (if they can eat on their own) or puree in your blender or Nutri bullet. You may want to slightly mash the vegetables.
  • Adjust the consistency of the puree before serving to your baby.
  • This puree can be kept in the fridge for 1-2 days.
