Chicken, Yellow Squash, Apple with Nutmeg


Who doesn’t love quick meals right? Prepare this in the skillet or in a pressure cooker, the goodness of the flavors is sure to impress both you and your little one. You can add milk or water to make the puree or just serve it as it is if your baby can chew meat. Add some salt and pepper in yours and enjoy with your baby.


This delicious meal sure reminds me of autumn’s bounty. You can also add some chicken broth in it and make yourself a hot bowl of delicious soup. The possibilities of this dish are endless.


You can choose to add a little bit of onion in this puree. It sure enhances the overall flavor of this dish. If you are making a skillet meal for yourself, try adding some balsamic vinegar, salt, pepper, garlic, chopped apple, cinnamon, allspice, ground cloves and sage leaves. For the soup, cook the squash and apple with onion, boil them with salt, pepper and nutmeg in chicken stock. Grill the chicken with the rest of the spices and enjoy.


Ingredients:
  • Chicken Breast – about ½ cup, cut into cubes
  • Yellow Squash – 1, washed and cut into big cubes
  • Apple – 1, washed, cored and cut into halves
  • Water – ½ cup
  • Salt – a pinch
  • Nutmeg – a pinch, freshly grated
  • Onion – 1 tablespoon, chopped (optional)

Directions:
  • Take a small pot (or pressure cooker), add all the ingredients in it.
  • Cover and cook till everything is well cooked and tender. For cooker, 3-4 whistles over medium heat usually cooks everything.
  • Once it cools down completely, transfer everything in the blender (Nutri Bullet) cup and make a smooth puree. 
  • Serve and let your baby enjoy the goodness!
  • This puree can be kept in the fridge for 1-2 days.
