Cheesy Chicken Pasta with Zucchini Carrot and Cilantro

 

I love pasta! We almost always have pasta at our home. It is easy to make and so delicious. Fridays are either pasta nights or bacon cheeseburger nights.

For baby Prisha we got this whole wheat organic penne pasta from whole foods. It is delicious and healthy. Of course I don’t add a lot of pasta in her meals, nor do I feed her pasta in every meal. I keep it well balanced with loads of vegetables, fruits and milk.

To make sure that the pasta is cooked very well and not al-dente I cook it with everything else. You can use a pot or do what I do (throw everything together in a pressure cooker and a couple whistles later everything is cooked). I press the pasta to check its cooked stage as well. 

This pasta recipe is loaded with nutrition from cheese, chicken and vegetables. It actually tastes very good because of the aroma and flavor of cilantro. With no added salt this could be your baby’s next favorite dish. Try it!



Ingredients:
  • Cheese – ½ cup, shredded/ grated
  • Chicken breast – about ¼ cup, cut into cubes
  • Penne Pasta – about 1/3 cup, uncooked
  • Zucchini – 1, washed and cut into big cubes
  • Carrot – 1, peeled, washed and cut into medium cubes
  • Cilantro – a few stems, washed thoroughly, use only fresh leaves


Directions:
  • Take a small pot (or pressure cooker), add the Chicken Breast, Pasta, Zucchini and Carrot in it.
  • Add 1-2 cups of water, cover and cook till everything is well cooked and tender. For cooker, 3-4 whistles over medium heat usually cooks everything.
  • Allow it to cool down a bit. 
  • Start layering in the blender (Nutri Bullet) cup, a layer of cooked pasta, vegetables etc., a layer of cheese, a layer of cilantro, repeat a couple of times till everything is in the blender cup.
  • Let the cheese melt down a bit then make the puree, adding a tablespoon of water at a time (in which the vegetables were cooked) till it is smooth enough for your baby.
  • Serve and let them enjoy the goodness!
  • This puree can be kept in the fridge for 1-2 days.
