Green Power: Green Beans Puree/ French Beans and Pear Puree with Yogurt


I have always loved green vegetables. Be it okra, spinach or beans I like cooking them on a rotation. Beans is also one of the first foods given to babies. Now that baby Prisha has started crawling and mind you she is a very fast crawler, I rarely get time to write and publish the recipes as fast as I am making them. Hopefully, your baby will also love these two purees as much as Prisha likes them.

Is your baby also pulling them up on things? Prisha has mastered the standing and then getting down from things. She also loves holding on to whatever handles she can find within her grasp. If she is on her high chair I take special precaution not to let her too near the dishwasher or kitchen drawers. You never know when she will hold on to them (lol). 



By the way, Costco sells snipped and pre-washed bags of both Green and French beans. So if you are a member definitely check them out. 

You can use Green Beans for making both the purees or French Beans whatever you have at home. If you are wondering about the difference between those two, I have it for you: there is none!

Ok so maybe they look a little different, the French Beans (or Haricots Verts) are skinnier than our traditional green beans. Flavor wise, they are more tender and flavorful than comparably sized green beans. They’re also younger than green beans and more expensive. Again, it is your personal choice what you want to use, both the Green and French beans go great in these simple purees.


Ingredients:
For the Green Beans/ French Beans Puree:
  • Green Beans – 20-30 or two handfuls

For the French Beans and Pear Puree:
  • French Beans – 10-15 or a handful
  • Pear – 1
  • Yogurt – 1 teaspoon (or as required)

Directions:
  • Trim the Green/ French beans and wash them.
  • Remove the stem and core of the Pear, you can do that by cutting the pear in half lengthwise then chopping it into pieces excluding the stem and core.
  • Fill a medium saucepan with 2 inches of water and bring to a boil over medium heat. Place the Green/ French beans (and the Pear) into a steamer basket over the boiling water, cover, and cook for 10 minutes or until tender. Let cool slightly. Reserve the steamer water. Alternatively, you can pressure cook with ½ cup of water. 2 whistles on medium heat should be enough.
  • Transfer the Green/ French beans (and the Pear) to your blender cup or Nutribullet cup and puree until smooth. Keep adding water 1 tablespoon at a time till you reach your desired consistency.
  • Green Beans puree is ready! 
  • You can serve the French beans and Pear puree as it is or mix a teaspoon of yogurt in it right before serving.
