Green Beans and Asparagus Puree


When making baby Prisha’s food, I am the first taster. So if something doesn’t taste good to me, I feel confident that Prisha won't like it either. The easiest way to make her food is to prepare her purees with the ingredients we will be having for dinner. So, last night when we decided to grill some yummy green beans and asparagus for our dinner (as a side dish), I thought, hey! this could be a wonderful puree for Prisha. She loved it!


Baby Prisha is now 11 months old and every day this little babe continues to amaze me. I think she has inherited Debarshi’s love of veggies. I would have never thought that she would like asparagus but she loved it! Asparagus is actually a very healthy vegetable for our babies. It has copper and iron for healthy blood and selenium for hormone function. Asparagus also has vitamins A and C for healthy skin and immunity, vitamin B for cell energy, and zinc for immunity. Along with these Asparagus is also very high in folate, an essential nutrient that helps our baby’s body grow cells and tissues. Finally, it contains vitamin K, which is important for blood clotting and metabolism. 


When preparing baby foods, I always go for the organic vegetables and fruits (only the best for our little ones right). The green beans add a delicious sweet flavor to the puree. 


Try this puree, I am sure your baby will also love it as much as Prisha does.



Ingredients:
  • Green Beans – 2 cups, trimmed and chopped
  • Asparagus – ½ cup, trimmed

Directions:
  • Start by peeling the Asparagus. Run the vegetable peeler from just below the tip to the bottom of the stalk to remove tough outer layer. Chop the Asparagus.
  • In a medium saucepan of boiling water, cook the Green Beans and Asparagus for 6 to 8 minutes or until very tender (you can also use a pressure cooker).
  • Let it cool down a bit then transfer to the blender/ Nutri Bullet cup. Purée in batches until very smooth.
  • To make sure there aren’t any solids, push through a fine-mesh sieve.
  • Serve to your baby and let them enjoy the goodness.
  • This puree can be kept in the fridge for 1-2 days.
