Pot Roast


Winter calls for comfort food and what can be more comforting than Pot Roast? While you devote a little more time for your dinner, cook your baby’s meal quickly in a pressure cooker and let them enjoy!


I wasn’t always a fan of beef but now I just love it. Slow cooked, tender beef in a delicious creamy gravy with potatoes and carrots, it’s a win win! And with this recipe you can enjoy this warm, hearty dinner with your baby.


For our pot roast, I love adding black pepper, garlic, red wine, beef broth, Worcestershire sauce and fresh thyme with bay leaf. You can also add celery stalks. For Prisha’s meal, I like adding some peas with carrots, tomato and sweet potato. I use organic beef for her and you can also get ground beef for making baby purees. Costco sells organic ground beef so buying organic food isn’t super expensive as well.


Prepare this pot roast with love and enjoy it with your loved ones. I am sure your baby will also love this special meal. 


Ingredients:
  • Beef - 1/3 cup, cut in small cubes
  • Peas - ¼ cup (I used frozen)
  • Sweet Potato – 1 cup, peeled, cut in cubes
  • Carrot – 1, big, peeled, cut in cubes
  • Tomato - 1, medium, cut into medium cubes
  • Salt – a pinch
  • Water – ½ cup

Directions:
  • Wash the vegetables and Beef thoroughly.
  • Place the ingredients into the pressure cooker. You can also use a heavy saucepan. 
  • Add the water.
  • Cover and cook over medium heat for 3-4 whistles or until the vegetables are tender and the beef completely cooks (about 20-25 minutes on low heat for saucepan).
  • Let them cool down completely then use half of the water (in which they were cooked) to make the puree. Puree using a blender or Nutri bullet. Keep adding 1-2 tablespoons of water till the puree is smooth enough for your baby.
  • Serve for lunch or dinner and let them enjoy the goodness. You can keep the puree for up-to 2 days in the fridge.
