Butternut Squash and Kiwi Puree


For baby Prisha’s first birthday we also decided to do a traditional Bengali lunch. I know what you are thinking, how will a one-year-old eat Rice, Dal, Panch Bhaja and Payesh? Well we did make a plate for Prisha and she did pick a couple items from it. She chewed on them, threw them on her new dress and on the ground then decided that she was ready to eat her purees and take a nap. So after she went to bed, Debarshi and I enjoyed her birthday lunch and let me tell you, it was superb!


There is only one thing I will say about this puree, look at the color! It is just so vibrant and full of nutrients.


Ingredients:
  • Kiwi – 1, washed, ends cut, peeled
  • Butternut Squash – 2/3 cup, peeled and cut into small cubes

Directions:
  • Cook the Butternut Squash in a microwave safe bowl with a cup of water and covered with a cling wrap for about 5-6 minutes or till it is fork tender.
  • Let it cool down completely then transfer to the blender cup (Nutri bullet cup) along with the Kiwi.
  • Blend to make a smooth puree, adding a tablespoon of water (in which the squash was cooked) at a time.
  • Serve and let your baby enjoy the goodness!
  • This puree can be kept in the fridge for 1-2 days.
